Winemaker's Tasting Notes

D
eep, complex strawberry, cedar, chocolate and light notes of vanilla. The flavors are very concentrated with strawberry jam, blackberry and chocolate with ample, fine-textured tannins leading to a long finish.

The Vintage
Early budbreak but a cool Spring season led to average timing overall. A few rain showers came through before harvest and helped the vines along through a long ripening season.

Two blocks compose the 2000 Cabernet including the usual "Crown" block and the lower "Ridgeline" block near the top of the vineyard.

Vinification
The grapes were crushed and fermented on the skins with wild yeast for 17 days. The cap was gently pumped over with a "sprinkler" twice a day. The wine was then put in French oak barrels, 28% new, and aged for 30 months before bottling unfined and unfiltered.
